Pumpkin Spice French Toast

 I am fully aware that fall is not yet upon us, however, I cannot contain my excitement any longer. Fall is by far my favorite season, with leaves fluttering onto the ground, the breaking out of sweaters, and most importantly, PUMPKIN everything! As I flipped through images of pumpkin recipes on Pinterest on last night, I began craving that pumpkin goodness. I feel slightly guilty, as I should still be enjoying the sun and lovely summer weather. I decided to compromise and came up with Pumpkin Spice French Toast.
French toast is one of my favorite breakfast dishes. Simply because french toast is one of those meals that makes you feel as if you are having brunch on a Tuesday. It only takes five minutes to prepare and can be quite healthy. So please enjoy my recipe! (the pumpkin pie spice is completely optional; I understand if you’re holding out for September 22nd, or at least September 1st)
Pumpkin Spice French Toast
Serves 1
Ingredients:
2 slice of whole wheat bread
1/2 cup liquid egg whites
1 tsp ground cinnamon
1 tsp vanilla extract
1 tsp pumpkin pie spice
toppings of your choice (I topped mine with fresh raspberries and pure maple syrup)
Directions:
1) Combine egg whites, cinnamon, vanilla extract, and pumpkin pie spice into a bowl.
2) Dip one slice of bread into the mixture.
3) Spray a pan with cooking spray.
4) Place on stove and turn on burner.
5) Add the slice of bread to the stove and cook until golden brown.
6) Repeat with other slice of bread.
7) Serve with toppings of choice.
8) Enjoy! [I enjoyed mine with some iced hazelnut coffee]
