Over the past almost four years that Joe and I have lived together, our weekday morning schedules have never synced up. Thus we never get to have breakfast together during the week. We tend to be on the go on Saturdays so Sundays has become our leisurely day for homemade breakfast together. In the spirit of leisure, we do keep it relatively simple so none of these breakfasts are challenging to make. Nor do they take much time. They are easy, delicious, and fun to make as a couple or solo!

SUNDAY BREAKFAST IDEAS

  • Avocado Toast: This beauty is pictured above and brings out my millennial tendencies. Sourdough bread is my favorite. I top my avocado toast with a poached egg and everything but the bagel seasoning. Pro tip: if you don’t have a toaster, heat your oven to 350 and toast for 5 minutes on each side.
  • Waffles with Blueberry Sauce: We dress up your classic Bisquick waffles with this simple blueberry sauce. I found it on Pinterest last summer after picking a few too many blueberries and it will definitely stay in the rotation.
  • Breakfast Sandwich: I mean you can make everything from scratch but I like to keep it simple with the biscuits from Trader Joe’s [find it by dairy]. We cook up some bacon and fried eggs. Get extra fancy with a slice of cheese.
  • Acai Bowls: I came up with my perfect recipe a few years back: 1-2 frozen acai packets [I prefer the unsweetened from Sambazon or Trader Joe’s], 1 frozen banana, 1/2 cup frozen mixed berries, 1/2 cup milk [I avoid vanilla or chocolate if using nut milk – it overpowers the flavor]. Blend these ingredients in a blender – I highly recommend a Vitamix or KitchenAid [our blender!]. Top with granola and peanut butter. Fresh berries are awesome too if you have them on hand! Pro tip: using a frozen banana is crucial for the consistency but can also be difficult to chop.
